Though avocado toast has become something of a cliché, it's popular for a reason—a slice of hearty toast spread with creamy avocado, drizzled with a bit of olive oil, and sprinkled with salt makes a simple, filling, and tasty snack (or breakfast!). If you need a little more excitement than what the basic formula offers, we've got plenty of different ways to give it a twist. One of our favorites is this bright vegan version, which gets its springtime vibe from sweet baby peas, slivers of crisp radish, and fresh basil.


I started off awkwardly posting my first “Cheap Lazy Vegan” video on YouTube in May 2015 while I was living in London, UK with the intention of just sharing my own thoughts & beliefs about veganism; as well as, showing some easy vegan meal ideas. The carob powder also adds a natural sweetness as an added bonus. If you don’t have carob, I suggest using a bit more cocoa powder and sweetener since it will be less sweet without the carob. And its cheap too. I was buying my chickpeas and processing them myself (resulting in a somewhat less than fine flour) as I thought that would be the cheapest way to get chickpea flour (as you do) and then I checked out the price difference at the health food shop and it was at least a dollar cheaper to buy the flour. November’s snack box was packed with an abundance of sweet treats. We are “Oat So Thankful” for you, so Novembers featured items packed real punch. First, you unwrapped an Endangered Species ESC One Puffed Rice Crunch + Dark Chocolate bar. Second, you snacked on gooey delicious JJ’s Sweets Coconut Sugar Caramels. This is SO helpful, because each time I’ve tried going vegan, it’s BETWEEN meals I’ve been stumped. OK, I made a healthy vegan breakfast. OK, I have a delicious vegan dinner planned. But …. now what?! And it’s funny, because it’s not like I snack on hard-boiled eggs or cheese, I just — I guess I couldn’t think of ANYTHING healthy to eat, not just something vegan! :-) (Except for plain straight veggies. And I just have way too much of a sweet tooth to feel called to snack on them by themselves.)
Thanks for the links Celeste. One article says ALA can have anti-cancer properties (with regard to breast tissue). Another says ALA may reduce risk of heart disease while it could be a risk factor for prostate cancer. Confusing! The studies are 6-9 years old, so I’d be interested in seeing if more recent research has been done on this topic. It’s definitely worth looking into. Thanks for passing them along!
