For the second part, I made 3 different recipes. All of them are SUPER easy, a baby could make them. Well, not really but maybe five year olds could. These are so easy that they don’t even really constitute a written “recipe” but I’ll try to give you one anyway. It’s one of those weird things that when the recipe is too easy, it’s almost difficult to write a recipe… I don’t know if that makes sense lol.
My all-time favourite cracker and quite possibly one of the top 3 recipes so far in 2012.  Endurance Crackers are extremely light and crispy while providing long-lasting energy. They are also vegan, gluten-free, soy-free, nut-free, sugar-free, and oil-free to boot. Feel free to change up the seasonings and spices as you wish (see the comments in the original post for some ideas) and serve with protein-packed hummus for a snack that will fuel you for the long haul. Man, I wish I had some right now!

To our delight, a number of companies have been making accidentally vegan snacks for years, and we’ve compiled a list of a few of our favorite go-to treats you can find practically anywhere. Bookmark this list for the next time you’re on a road trip in the middle of nowhere, in need of something to munch on at the movies, or trying to get through a difficult moment and are in need of some sweet or salty fuel.
Snacks can absolutely fit in your diet if you're trying to lose weight. Having ideas for healthy snacks to pack for work snacks, grab and go snacks, store-bought snacks and snacks you can make yourself will help vary the nutrients you get and keep you from going hangry between meals. Remember, think nutrient-dense (fiber, protein, vitamins, minerals) and your snacks will help you get the nutrition your body needs and keep you full.
Known for being a cheap staple, rice and beans is a classic lazy person’s meal that’s also good for you! Brown rice is packed with hardy nutrients and can be made in large batches to last for a few days worth of meals. If you don’t have the time to cook rice on the stove, opt for using instant. Although the texture will be different, this is still a healthier option for the time-crunched than processed foods and breads. Beans make a killer counterpart to rice as they are incredibly cheap and will keep you full for hours. Black beans, kidney beans, chickpeas or black-eyed peas are all quality options and are easy because you can buy them in a can. Make sure to rinse them well before using. The gummy fruit snack making process is simple–just 3 ingredients and less than 10 minutes of active time. Whisk the sweetener and agar agar into the juice. Let it rest for 5 minutes. Simmer and whisk for 2 minutes. Pour into a container/molds. Chill. For the jam version, you will just blend the juice + jam + agar (to avoid jammy chunks) and then boil/whisk/chill it the same way.
My afternoon snack is often a small handful of nuts and a piece of fruit. It’s delicious, satisfying and nutritious. Try raspberries and walnuts, banana and pecans, cashew and blueberries, almond and banana or any other combination you can think of. You can also spread peanut butter over sliced banana or almond butter over sliced apple. Try sprinkling it with cinnamon for extra flavour and it’s blood sugar stabilizing benefits!
My daughter loves the box and it’s a such a highlight when she sees it at our door! The products are so varied and interesting and she and I are both always looking for new vegan items on the market. I’m planning of giving box subscriptions to friends as a gift this coming year...I don’t feel the need to research and see what other boxes are like..we really enjoy yours!!
