Use this guide as a great starting point for a lot of healthy snacks (and a few that are not so healthy). Of course, you don't need to be vegan to enjoy some of these tasty snacks. These snacks are also great if you are heading to a potluck, office party, or school event. By bringing a vegan snack, you'll share a healthy option and something that someone who may be dairy-free, gluten-free, or vegan (or vegetarian) can happily enjoy.
I’m pretty sure this post will make vegan marathon training more doable for me! I’m doing pretty good, but I get sooooo hungry between meals the day or two after a long run. This should help hold me over. Perfect timing too, because in the next few weeks I’ll be up to the longest runs. I just tried the endurance crackers and the protein bars and despite the fact that my crackers came out WAY thicker than yours did, they’re still great snacks! I think my favorite are the oatmeal squares. Awesome breakfast for sure! Thank you for the awesome ideas. :-)

For the second part, I made 3 different recipes. All of them are SUPER easy, a baby could make them. Well, not really but maybe five year olds could. These are so easy that they don’t even really constitute a written “recipe” but I’ll try to give you one anyway. It’s one of those weird things that when the recipe is too easy, it’s almost difficult to write a recipe… I don’t know if that makes sense lol.
This is one of my favourite quick snacks, that is if you bake the acorn squash ahead of time. I like to include one or two baked acorn squash in my weekly food prep so they’re ready for snacks and meals during the week. My favourite fillings are peanut butter, yogurt and granola but you can also fill them with savoury ingredients like hummus, guacamole, quinoa, black beans, any mixture of those or anything else you can think of.
This classic Sicilian eggplant dish, terrific as a spread, a dip, or a pasta sauce, is proof positive that vegan food doesn't have to be bland. I must say, I do so appreciate the rigorous research you put into the perfect New Year’s recipe for us! 🙂 I like to think that the sugar coating resembles the sparkle of champagne. Nice random fact! Why am I not surprised that you knew of your fruit-sweetened calling before you could practically walk? 🙂 And good for your for sticking it to autocorrect until it just gave up. If “dummy” is saying something, then what is “mummy” telling you?? That’s a thinker, folks! Two flavors, one for each agar. I can get on board with that! I discovered your website/blog when searching for vegan/vegetarian recipes. I absolutely love it!!! I look forward to every new entry! I have searched around the website & recipes and just enjoy all of it. I do have a question, which I hope, isn’t silly. I have seen calorie counts for some recipes and some without. Is there somewhere that I can locate the calorie counts. I DO realize you are not a calorie counter and I am slowly tring to adapt to that life style too, it is a new mindset and I slowly am going that way but am in the process of losing weight and eating healthier so I thought I would ask!

I made those today with lime flavour. I wanted sour candy and didn’t have citric acid… but now it’s in a mold (same kind of mold you used) in the fridge. I tried to get it out of the mold, but it’s not possible. it breaks. So is there a better way to get it out or didn’t I use enough agar-agar? Or is it not long enough in the fridge yet… what did I do wrong?

NO….well..the only modification i did was to change the 1/2 cup of chia seeds (cause i didnt have those) for 1/2 half of mixed seeds. I put the seeds, the water, grated onion and garlic and some herbs…. they are reallly tasty tough! i really loved them! i was just expecting it to be like crakers….i was thinking that maybe i missed some flour or sth similar that allows the mix to hold together…. what you think?

One important note is be sure you use agar agar powder not flakes. I have tried it with the flakes before and it did not set up the same way. I have also tried making powder from the flakes in a coffee grinder–another fail. This is the agar agar powder I used because it was organic and relatively reasonably priced. Also the packaging was pretty, and I would be lying if I said that didn’t factor in.
If you need your snack to have real staying power, go for a combo of good protein and a little bit of fat. A homemade egg salad is a great choice. Chop up one whole egg and one egg white, then mix with a tablespoon of reduced-fat mayonnaise. The high-quality protein in the eggs will fuel your body for hours, while the fat helps slow digestion, so you'll feel full and energized longer.
One is sweetened with maple syrup (or any liquid sweetener), and the other is sweetened with jam. I used a fruit juice sweetened jam in my fave flavor–blueberry.
