When tomatoes are out of season, you can still make great bruschetta by breaking out a can. Slowly roasting canned whole tomatoes concentrates their flavors, and mixing them with basil and red wine vinegar as a topping for toast produces a delicious year-round snack. We like to rub the toasts with garlic before spooning on the tomatoes to get an extra layer of flavor.
For many women, dieting equals food restriction. Snacks? They usually get eliminated in the name of saving calories. But snacking when you're watching your weight is actually a good idea. "[When dieting,] people often wait too long in between meals, so by the time they eat, they're so hungry, their portions or choices are out of control," says Linda McLachlan, RD, CDN, a New Jersey dietitian with Nutrition Matters, LLC. "Snacking helps keep you satisfied and wards off cravings." Here, seven low-calorie snacks to help you with your diet goals.
My daughter loves the box and it’s a such a highlight when she sees it at our door! The products are so varied and interesting and she and I are both always looking for new vegan items on the market. For a sweet fix, try mixing mandarin oranges canned in their own juice with a couple tablespoons of light whipped topping. The oranges give a great hit of vitamin C and other antioxidants, and the light whipped topping gives the snack an indulgent feel (a feeling you often miss when you're watching what you eat). "This is a good substitute for ice cream when you're dieting," adds McLachlan.
If you're looking for a creative way to add more fruit to your diet, try frozen banana pops. Slice several peeled bananas in half and insert popsicle sticks. Coat each half with an ounce of low-fat plain yogurt. Put the pops in the freezer, and soon you'll have ready-to-eat low-calorie treats. At just under 80 calories a pop, this is a snack you can feel good about.
This makes a great snack or even healthy dessert. Try adding a slice of banana and sprinkling it with cinnamon and cacao for a decadent, raw vegan snack. I often eat this for dessert to satisfy sweet tooth. Almond butter, tahini, peanut butter, sunflower seed butter or any other nut or seed butter are also delicious options! If you want to get really fancy, how about some Peanut Butter Mousse Stuffed Dates?
For the second part, I made 3 different recipes. All of them are SUPER easy, a baby could make them. Well, not really but maybe five year olds could. These are so easy that they don’t even really constitute a written “recipe” but I’ll try to give you one anyway. It’s one of those weird things that when the recipe is too easy, it’s almost difficult to write a recipe… I don’t know if that makes sense lol.

My all-time favourite cracker and quite possibly one of the top 3 recipes so far in 2012.  Endurance Crackers are extremely light and crispy while providing long-lasting energy. They are also vegan, gluten-free, soy-free, nut-free, sugar-free, and oil-free to boot. Feel free to change up the seasonings and spices as you wish (see the comments in the original post for some ideas) and serve with protein-packed hummus for a snack that will fuel you for the long haul. Man, I wish I had some right now!

A dense loaf, but not in a bad way. Whole grain spelt flour tends to make dense breads, but I just love the nutty flavour of spelt so I don’t mind. The walnuts, streusel, and raisins add just the right amount of sweetness and crunch and the zucchini gives moisture without needing any oil. You also can’t taste the zucchini at all, but you can see the pretty green flecks!
